Instructions
- Pat the scallops dry with a paper towel and season with salt and pepper.
- Heat olive oil in a skillet over high heat until smoking.
- Add the scallops in a single layer and cook for 2-3 minutes on each side until golden brown.
- Remove the scallops from the pan and melt the butter.
- Add garlic to the pan and cook for 30 seconds, then stir in lemon juice and herbs.
- Return the scallops to the pan and spoon the sauce over them.
- Garnish with herbs and lemon wedges, then serve immediately.
