Ingredients

The scallops

  • 1 lb scallops
  • 1 pinch salt
  • to taste freshly cracked black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon flat leaf parsley leaves, chopped

The sauce

  • 1 tablespoon butter
  • 1 clove garlic, minced
  • ¼ cup heavy whipping cream
  • ¼ cup white wine
  • 1 pinch salt

Instructions

  1. Melt the butter in a saucepan and add the minced garlic, sautéing until fragrant.
  2. Pour in the heavy cream and white wine, then simmer on low heat until the sauce reduces slightly.
  3. Season the sauce with salt and turn off the heat.
  4. Season the scallops with salt and pepper.
  5. Heat olive oil in a skillet over medium heat and pan-sear the scallops for 1–2 minutes on each side until browned and cooked through.
  6. Transfer the scallops to a serving platter, spoon the sauce over them, and garnish with parsley.
  7. Serve immediately.
