Ingredients

The scallops

  • 1.5 lbs large scallops, thawed
  • 1 teaspoon salt
  • ½ teaspoon ground pepper
  • 2 tablespoons grape seed oil
  • 2 cloves garlic, minced
  • 1 tablespoon butter

The herb mixture

  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 teaspoons fresh lime juice
  • ¼ teaspoon kosher salt
  • 2 teaspoons lime zest
  • 1 teaspoon olive oil

Instructions

  1. Pat the scallops dry with a paper towel and season with salt and pepper.
  2. Prepare the herb paste by grinding parsley, cilantro, lime juice, olive oil, and kosher salt until a paste forms.
  3. Heat a skillet over high heat and add the grape seed oil.
  4. Once the oil is hot, add the scallops in a single layer and sear for 2 to 2.5 minutes on each side.
  5. Remove the skillet from heat and add lime zest, garlic, and butter, swirling until the butter melts.
  6. Plate the scallops and top with the herb paste, adding extra for dipping, and squeeze fresh lime over before serving.
