Instructions
- Pat the scallops dry with a paper towel and season with salt and pepper.
- Prepare the herb paste by grinding parsley, cilantro, lime juice, olive oil, and kosher salt until a paste forms.
- Heat a skillet over high heat and add the grape seed oil.
- Once the oil is hot, add the scallops in a single layer and sear for 2 to 2.5 minutes on each side.
- Remove the skillet from heat and add lime zest, garlic, and butter, swirling until the butter melts.
- Plate the scallops and top with the herb paste, adding extra for dipping, and squeeze fresh lime over before serving.
