Ingredients

The chicken and mustard coating

  • 20 pieces chicken tenders
  • ¼ cup Dijon mustard
  • 2 tablespoons Swerve Confectioners (or erythritol powdered)
  • ¼ teaspoon dill
  • teaspoon liquid smoke flavoring

The chipotle seasoning

  • 1 teaspoon Chipotle chile powder
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon garlic salt
  • ¼ teaspoon cumin
  • teaspoon cinnamon

The pecan coating

  • 2 cups pecans
  • ½ teaspoon garlic salt
  • ¼ teaspoon Chipotle chile powder

Instructions

  1. Preheat the oven to 375°F and prepare a sheet pan with foil or grease it.
  2. Mix the mustard coating ingredients together in a small bowl.
  3. Chop the pecans finely and mix with garlic salt and chipotle powder in a separate bowl.
  4. Dry the chicken tenders with a paper towel and coat them with the mustard mixture.
  5. Coat each chicken tender in the pecan mixture and place them on the sheet pan.
  6. Bake the chicken tenders for 7 minutes, then flip them and bake for another 7 minutes.
  7. Turn on the broiler and broil the chicken for a few minutes until the nuts are browned and crispy.
  8. Serve the chicken tenders hot.
