Ingredients

The chicken tenders

  • 2 lbs Butcher Box chicken tenders

The crust

  • ¾ cup raw cashews
  • ½ cup unsweetened shredded coconut
  • 2 units eggs, whisked
  • ½ cup coconut flour
  • ½ tsp salt
  • 2 tbsp Primal Palate taco seasoning

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a blender, pulse the cashews, shredded coconut, taco seasoning, and salt until ground but still textured.
  4. Whisk the eggs in a bowl and set aside.
  5. Place the coconut flour in another bowl and set aside.
  6. Pour the cashew mixture into a separate bowl and set aside.
  7. Dip each chicken piece into the coconut flour, then into the egg, and finally roll it in the cashew mixture.
  8. Lay the coated chicken tenders flat on the baking sheet.
  9. Bake for 20-25 minutes until cooked through.
  10. Serve with your favorite sauces.
