Cashew Crusted Chicken Tenders

Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- In a blender, pulse the cashews, shredded coconut, taco seasoning, and salt until ground but still textured.
- Whisk the eggs in a bowl and set aside.
- Place the coconut flour in another bowl and set aside.
- Pour the cashew mixture into a separate bowl and set aside.
- Dip each chicken piece into the coconut flour, then into the egg, and finally roll it in the cashew mixture.
- Lay the coated chicken tenders flat on the baking sheet.
- Bake for 20-25 minutes until cooked through.
- Serve with your favorite sauces.
