Ingredients

The chicken

  • 1 ½ lbs boneless skinless organic chicken thighs

The coating

  • ¾ cup unsalted raw cashews
  • ½ cup coconut flour
  • 2 pcs eggs, whisked
  • 1 tsp sea salt
  • 2 tbsp Primal Palate Taco Seasoning (or any combination of herbs)

Dipping sauce

  • to taste dipping sauce of choice (e.g., The New Primal BBQ Sauce)

Instructions

  1. Preheat the oven to 375°F.
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, whisk the eggs and set aside.
  4. In another bowl, add the coconut flour and set aside.
  5. In a food processor, pulse the cashews, seasoning, and salt until a chunky meal forms.
  6. Pour the cashew mixture into another bowl.
  7. Dip each chicken thigh into the coconut flour, then the egg, and finally the cashew blend.
  8. Lay the coated thighs on the baking sheet.
  9. Repeat the process until all thighs are coated.
  10. Bake for 22-24 minutes or until fully cooked.
  11. Optionally, broil for about one minute for extra browning.
