Crispy Cashew Chicken Thighs

Dipping sauce

Instructions
- Preheat the oven to 375°F.
- Line a baking sheet with parchment paper.
- In a small bowl, whisk the eggs and set aside.
- In another bowl, add the coconut flour and set aside.
- In a food processor, pulse the cashews, seasoning, and salt until a chunky meal forms.
- Pour the cashew mixture into another bowl.
- Dip each chicken thigh into the coconut flour, then the egg, and finally the cashew blend.
- Lay the coated thighs on the baking sheet.
- Repeat the process until all thighs are coated.
- Bake for 22-24 minutes or until fully cooked.
- Optionally, broil for about one minute for extra browning.
