Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Slice the chicken breasts into strips and set aside.
- In a blender or food processor, combine the Tomato Basil Harvest Snaps, cashews, and sea salt, and pulse until crumbly.
- Transfer the mixture to a medium bowl.
- In another bowl, whisk the eggs.
- Dip the chicken strips into the eggs, then coat them in the cashew/Harvest Snaps mixture, and place on the baking sheet.
- Repeat until all chicken is coated.
- Bake for 20-22 minutes, checking to ensure the chicken is fully cooked.
