Ingredients

The chicken tenders

  • pounds boneless skinless chicken breast
  • 2 eggs eggs
  • 1 tsp sea salt
  • ¼ cup fresh basil, chopped (optional)

The coating

  • 1 cup unsalted cashews
  • 1 package Tomato Basil Harvest Snaps

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Slice the chicken breasts into strips and set aside.
  3. In a blender or food processor, combine the Tomato Basil Harvest Snaps, cashews, and sea salt, and pulse until crumbly.
  4. Transfer the mixture to a medium bowl.
  5. In another bowl, whisk the eggs.
  6. Dip the chicken strips into the eggs, then coat them in the cashew/Harvest Snaps mixture, and place on the baking sheet.
  7. Repeat until all chicken is coated.
  8. Bake for 20-22 minutes, checking to ensure the chicken is fully cooked.
