Ingredients

The muffins

  • 1 cup unflavored whey protein powder
  • ½ cup coconut flour
  • cup soy flour
  • 1/8 cup granulated sweetener of choice
  • 1 Tbsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ tsp xanthan gum
  • 1 cup 100% orange juice
  • ½ cup plain Greek yogurt
  • ½ cup liquid egg whites
  • ½ - 1 tsp fresh grated orange peel

The icing

  • ¼ cup powdered sugar of choice
  • ¼ cup vanilla whey protein powder
  • ¼ cup 100% orange juice

Instructions

  1. Preheat the oven to 325°F and prepare a 12-cup muffin pan.
  2. In a large bowl, mix the protein powder, coconut flour, soy flour, sweetener, cornstarch, baking powder, salt, and xanthan gum.
  3. Add the orange juice, Greek yogurt, egg whites, and orange peel to the dry ingredients and mix well.
  4. Fill the muffin cups to the top with the batter.
  5. Bake for 18-20 minutes until a toothpick comes out with a little batter.
  6. Let the muffins cool in the pan to finish cooking.
  7. While cooling, whisk together the icing ingredients.
  8. Drizzle the icing over the muffins once they have cooled.
