Instructions
- Preheat the oven to 325°F and prepare a 12-cup muffin pan.
- In a large bowl, mix the protein powder, coconut flour, soy flour, sweetener, cornstarch, baking powder, salt, and xanthan gum.
- Add the orange juice, Greek yogurt, egg whites, and orange peel to the dry ingredients and mix well.
- Fill the muffin cups to the top with the batter.
- Bake for 18-20 minutes until a toothpick comes out with a little batter.
- Let the muffins cool in the pan to finish cooking.
- While cooling, whisk together the icing ingredients.
- Drizzle the icing over the muffins once they have cooled.
