Instructions
- Preheat the oven to 325°F and grease or line a 12-cup muffin pan.
- In a large mixing bowl, combine the protein powder, coconut flour, soy flour, sweetener, cornstarch, baking powder, salt, and xanthan gum.
- Stir in the orange juice, Greek yogurt, egg whites, and orange peel.
- Fill the muffin cups to the top with batter.
- Bake for 18-20 minutes until a toothpick comes out almost clean.
- Allow the muffins to cool in the pan to finish cooking.
- While the muffins cool, whisk together the icing ingredients.
- Drizzle the icing over the muffins once cooled.
