Ingredients

The muffins

  • cup milk
  • 3 tablespoons vegetable oil
  • 1 large egg, beaten
  • 2 tablespoons corn syrup
  • cup orange juice
  • 1 cup whole wheat pastry flour
  • cup brown sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt

The glaze and topping

  • 1 cup powdered sugar
  • 2 tablespoons orange juice
  • to taste orange zest + white sugar

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk together milk, oil, egg, corn syrup, orange juice, and a pinch of zest.
  3. Mix in flour, brown sugar, baking powder, and salt until just combined.
  4. Pour the batter into a greased muffin tin and bake for 10-15 minutes until the tops spring back when pressed.
  5. For the glaze, mix powdered sugar with orange juice, adding more juice as needed for desired consistency.
  6. For the sugared zest, combine zest with sugar until crumbly.
  7. Cool muffins completely before dipping the tops in glaze and sprinkling with sugared zest.
