No-Bake Peanut Butter Granola Bars

Instructions
- Line a shallow baking dish with parchment paper.
- Soak the pitted dates in hot water for at least 10 minutes.
- Blend the soaked dates with the soaking water until thick and combined.
- Heat the date mixture with peanut butter, brown rice syrup, and vanilla in a saucepan until well combined.
- In a large bowl, mix oats, chia seeds, and flaxseed, then stir in the wet mixture.
- Press the mixture firmly into the baking dish and freeze for at least 2 hours.
- Cut into 12 bars and store in the freezer.
