Ingredients

The base

  • 7 large pitted medjool dates
  • 5 tbsp hot water
  • ½ cup peanut butter
  • 3 tbsp brown rice syrup (or honey)
  • 1 tsp vanilla extract

The dry ingredients

  • 2 cups old-fashioned oats
  • ¼ cup chia seeds
  • 2 tbsp ground flaxseed

Instructions

  1. Line a shallow baking dish with parchment paper.
  2. Soak the pitted dates in hot water for at least 10 minutes.
  3. Blend the soaked dates with the soaking water until thick and combined.
  4. Heat the date mixture with peanut butter, brown rice syrup, and vanilla in a saucepan until well combined.
  5. In a large bowl, mix oats, chia seeds, and flaxseed, then stir in the wet mixture.
  6. Press the mixture firmly into the baking dish and freeze for at least 2 hours.
  7. Cut into 12 bars and store in the freezer.
