Ingredients

Zucchini Noodles

  • 40 oz Zucchini (about 8 medium)

Meatballs

  • cup Grated parmesan cheese
  • 2 tsp Italian seasoning
  • ¼ tsp Sea salt
  • ¼ tsp Black pepper
  • 2 tbsp Heavy cream
  • 2 tbsp Onion (grated)
  • 1 large Egg
  • 2 cloves Garlic (minced)
  • 1 tbsp Fresh parsley (chopped)
  • ¾ lb Ground beef

Assembly

  • cup Marinara sauce (divided into ¾ cup and ½ cup)
  • 2 tbsp Grated parmesan cheese (to taste)

Instructions

  1. Spiralize the zucchini to create noodles.
  2. Prepare the meatball mixture by combining all ingredients except for the ground beef in a bowl, then add the beef and mix until just combined.
  3. Form the mixture into 1-inch meatballs and place them on a lined baking sheet.
  4. Bake the meatballs at 425°F (218°C) for about 10 minutes, then broil for 2 minutes until golden.
  5. Prepare the marinara sauce by heating or making it from scratch.
  6. Toss the zucchini noodles with ¾ cup of the marinara sauce.
  7. Serve the zucchini noodles topped with meatballs, additional sauce, and grated parmesan.
