Instructions
- Preheat the oven to 425°F and grease a baking sheet.
- Cut the mozzarella into 12 equal pieces.
- Shred the zucchinis and squeeze out excess liquid with a towel.
- In a bowl, combine shredded zucchini, eggs, breadcrumbs, parmesan, basil, garlic, and salt.
- Form the mixture into balls, placing a mozzarella piece inside each.
- Place the meatballs on the baking sheet and bake for 14 to 16 minutes until golden brown.
- Serve warm over noodles with red sauce and garnish with additional parmesan if desired.
