Ingredients

The meatballs

  • 3 medium zucchinis
  • 2 large eggs
  • cup whole-wheat breadcrumbs
  • cup parmesan cheese
  • 2 tablespoons fresh basil
  • 2 cloves garlic
  • ½ teaspoon salt

The cheese filling

  • 4 ounces mozzarella cheese

Instructions

  1. Preheat the oven to 425°F and grease a baking sheet.
  2. Cut the mozzarella into 12 equal pieces.
  3. Shred the zucchinis and squeeze out excess liquid with a towel.
  4. In a bowl, combine shredded zucchini, eggs, breadcrumbs, parmesan, basil, garlic, and salt.
  5. Form the mixture into balls, placing a mozzarella piece inside each.
  6. Place the meatballs on the baking sheet and bake for 14 to 16 minutes until golden brown.
  7. Serve warm over noodles with red sauce and garnish with additional parmesan if desired.
