Zucchini Noodles and Meatballs

Ingredients

The noodles

  • 6 medium zucchini

The sauce

  • 2 cups marinara sauce

The meatballs

  • 1 pound bulk Italian sausage

Instructions

  1. Wash the zucchini and slice a thin piece off the bottom of each to prevent rolling.
  2. Use a julienne peeler or spiralizer to create noodles from the zucchini.
  3. In a medium saucepan, heat the marinara sauce over medium heat until simmering.
  4. Add the meatballs to the sauce and stir well, then cover and simmer until the meatballs are cooked through.
  5. Stir the raw zucchini noodles into the meatballs and sauce, cooking until they reach the desired softness.
  6. Serve immediately in bowls.
