Grilled Watermelon Mint Julep

Instructions
- Combine mint, sugar, and water in a saucepan and heat until it simmers; steep for 1 hour and strain.
- Grill watermelon wedges for about 1 minute per side until they have grill marks.
- Chop the grilled watermelon into cubes and puree in a food processor.
- Strain the watermelon puree to remove pulp.
- Pack cocktail glasses with crushed ice, add bourbon, mint syrup, and top with watermelon puree.
- Garnish with mint leaves.
