Grilled Watermelon

Ingredients

The topping

  • cups raw corn kernels
  • ½ cup diced red onion
  • ½ cup diced red bell pepper
  • 1 clove garlic, minced
  • heaping ¼ teaspoon sea salt
  • 4 teaspoons Tabasco Green Sauce

The watermelon

  • 6 pieces 1.5-inch watermelon wedges
  • Cooking spray, for the grill

The garnish

  • ½ cup crumbled feta cheese
  • 1 small avocado, diced
  • Mint and/or basil leaves
  • Lime wedges, optional

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a medium bowl, combine the corn, onion, red pepper, garlic, salt, and Tabasco Green Sauce. Chill until ready to use.
  3. Spray the grill grates with cooking spray and grill the watermelon wedges for 2-3 minutes per side until char marks form.
  4. Remove the watermelon from the grill and let it cool for a few minutes.
  5. Top the grilled watermelon with the corn mixture, feta, avocado, and fresh herbs. Serve with additional Tabasco or lime wedges if desired.
