Watermelon Skewers

Ingredients

  • ½ medium seedless watermelon, cubed
  • 250 g feta, cubed
  • 1 cup fresh mint
  • 1 cup fresh basil
  • cup pistachios, chopped
  • 3-4 tbsp balsamic vinegar
  • 1 lime zested
  • to taste flaky salt
  • as needed bamboo skewers

Instructions

  1. Prepare all of the ingredients.
  2. Assemble the skewers by alternating pieces of watermelon and feta with basil or mint.
  3. Arrange the skewers on a platter.
  4. Sprinkle chopped pistachios over the skewers and lightly press them into the feta.
  5. Drizzle balsamic vinegar, sprinkle flaky salt, and add lime zest.
  6. Serve immediately or store in the fridge, refreshing the balsamic vinegar and pistachios when ready to serve.
