Ingredients

The salad

  • 4 cups cubed watermelon, chilled
  • 1 cup diced cucumber
  • ¼ cup thinly sliced red onion
  • cup crumbled feta cheese
  • 2 tablespoons fresh mint, roughly chopped
  • 2 tablespoons fresh basil, roughly chopped

The dressing

  • tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • to taste salt & pepper

Instructions

  1. Whisk together balsamic vinegar, olive oil, salt, and pepper in a small bowl and set aside.
  2. In a large bowl or serving platter, combine the chilled watermelon, cucumber, and red onion.
  3. Before serving, top the salad with feta cheese, fresh mint, fresh basil, and drizzle the balsamic dressing on top.
