Ingredients

The salad

  • 6 cups Watermelon, cubed
  • ¾ cup Pine Nuts, toasted
  • 1 cup Greek Feta, crumbled
  • 1 handful Fresh Basil, chopped or torn

The dressing

  • 3 tablespoons Extra Virgin Olive Oil
  • 1 pinch Flaky Salt

Instructions

  1. Cube the watermelon and set it aside.
  2. Heat a small pan over medium-high heat and toast the pine nuts until fragrant, about 4-5 minutes.
  3. Set the toasted pine nuts aside to cool.
  4. Crumble the feta cheese and chop or tear the basil into fine pieces.
  5. Assemble the salad by placing the cubed watermelon in a large dish and topping it with the toasted pine nuts, feta cheese, and basil.
  6. Drizzle with olive oil and garnish with flaky salt before serving.
