Watermelon, Feta, and Mint Salad

Ingredients

  • 1 watermelon watermelon, no larger than 9 lbs.
  • 3 quarts cubed watermelon
  • 2 to 3 tablespoons olive oil
  • 2 to 3 tablespoons aged balsamic
  • ¼ cup packed mint leaves
  • ¼ cup packed basil leaves
  • 7 to 8 ounces feta
  • 4 ounces arugula
  • to taste flaky sea salt or kosher salt
  • to taste freshly cracked black pepper

Instructions

  1. Peel and cube the watermelon, then transfer 3 quarts of cubes to a large bowl.
  2. Season the watermelon cubes with sea salt and add olive oil and aged balsamic vinegar, then toss gently and let stand for 5 minutes.
  3. Gather the mint, basil, and slice the feta, then add them to the bowl and toss to combine.
  4. Fold in the arugula and add cracked pepper if desired, then serve immediately.
