Ingredients

The salad

  • 1 small seedless watermelon, cut into 1-inch cubes (roughly 4 cups)
  • 2 cups thinly sliced English cucumbers (approximately 3 cucumbers)
  • ¼ small red onion, thinly sliced
  • 1 cup fresh basil, roughly chopped
  • 1 cup fresh mint, roughly chopped
  • cup feta crumbles
  • ¼ cup raw pine nuts

The vinaigrette

  • 2 teaspoons red wine vinegar
  • 2 teaspoons lemon juice
  • 1 teaspoon olive oil
  • ½ teaspoon coarse salt, separated
  • ¼ teaspoon freshly grated pepper

Instructions

  1. Combine watermelon cubes, cucumbers, and red onion in a large salad bowl and toss gently.
  2. In a separate bowl, whisk together red wine vinegar, lemon juice, olive oil, and ⅛ teaspoon of salt.
  3. Drizzle the dressing over the salad and toss again.
  4. Add basil, mint, and feta crumbles to the salad; season with remaining salt and pepper.
  5. Toast pine nuts in a small skillet over medium heat for 3-4 minutes until golden brown, tossing frequently.
  6. Sprinkle toasted pine nuts over the salad and serve immediately.
