Watermelon Salad

The vinaigrette

red wine vinegar

Instructions
- Combine watermelon cubes, cucumbers, and red onion in a large salad bowl and toss gently.
- In a separate bowl, whisk together red wine vinegar, lemon juice, olive oil, and ⅛ teaspoon of salt.
- Drizzle the dressing over the salad and toss again.
- Add basil, mint, and feta crumbles to the salad; season with remaining salt and pepper.
- Toast pine nuts in a small skillet over medium heat for 3-4 minutes until golden brown, tossing frequently.
- Sprinkle toasted pine nuts over the salad and serve immediately.
