Watermelon Salad

Ingredients

The salad

  • 6 cups seedless watermelon
  • 1 whole cucumber
  • ½ cup feta cheese
  • ½ cup red onion
  • 1 cup coarsely chopped mint leaves

The dressing

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red vinegar
  • 1 tablespoon lime juice
  • ¼ - ½ teaspoon cayenne pepper
  • 1 tablespoon honey
  • ½ teaspoon hot sauce
  • to taste salt
  • ½ teaspoon freshly ground pepper

Instructions

  1. Cut off both ends of the watermelon and slice it in half, then cut into slices.
  2. Remove the skin from the watermelon slices and cut them into cubes.
  3. In a small bowl, whisk together the olive oil, lemon juice, red vinegar, lime juice, cayenne pepper, honey, hot sauce, salt, and pepper.
  4. In a large bowl, combine the watermelon, cucumber, feta cheese, red onion, and chopped mint.
  5. Toss the salad with the dressing and garnish with mint leaves.
  6. Refrigerate until ready to serve.
