Ingredients

The dressing

  • 3 tbsp lemon juice
  • cups watermelon
  • 1 clove garlic
  • 2 tbsp chopped red onion
  • ¼ tsp chili flakes
  • 1 tsp salt
  • cup olive oil

The salad

  • 1 mini cucumber sliced into rounds
  • 1 cup feta cubes
  • ½ small red onion, thinly sliced
  • ½ cup green olives

Instructions

  1. Blend the dressing ingredients until smooth.
  2. Combine cucumber, feta, red onion, and olives in a jar.
  3. Pour the dressing over the salad ingredients and shake gently.
  4. Store in the fridge for up to 5 days.
