Ingredients

Dressing

  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons fresh lime juice
  • ½ clove garlic, minced
  • ¼ teaspoon sea salt

Salad

  • 5 cups cubed watermelon
  • 1 cup diced English cucumber
  • ¼ cup thinly sliced red onion
  • cup crumbled feta cheese
  • 1 whole avocado, cubed
  • cup torn fresh mint or basil leaves
  • ½ whole jalapeño or serrano pepper, thinly sliced (optional)
  • to taste sea salt

Instructions

  1. Prepare the dressing by whisking together olive oil, lime juice, garlic, and salt in a small bowl.
  2. On a large plate or platter, arrange the watermelon, cucumber, and red onions.
  3. Drizzle half of the dressing over the arranged ingredients.
  4. Top the salad with feta, avocado, mint, and optional serrano pepper.
  5. Drizzle with the remaining dressing, season to taste, and serve.
