The dressing

Instructions
- Combine watermelon cubes, cucumber, and mint in a large bowl.
- In a small bowl, whisk together oil, lime zest, lime juice, and salt to make the dressing.
- Pour the dressing over the watermelon, cucumbers, mint, and shallots, and toss gently to combine.
- Add feta cheese and gently mix again.
- Serve immediately over arugula or greens.
