Ingredients

The salad

  • 4 cups watermelon, cut into 1-inch cubes

  • ½ cup crumbled feta cheese
  • 2 tablespoons thinly sliced red onion or shallots
  • 3 cups arugula or other greens of choice

The dressing

  • 2 teaspoons avocado oil or olive oil
  • 1 teaspoon lime zest
  • 1 tablespoon lime juice
  • ¼ teaspoon fine salt

Instructions

  1. Combine watermelon cubes, cucumber, and mint in a large bowl.
  2. In a small bowl, whisk together oil, lime zest, lime juice, and salt to make the dressing.
  3. Pour the dressing over the watermelon, cucumbers, mint, and shallots, and toss gently to combine.
  4. Add feta cheese and gently mix again.
  5. Serve immediately over arugula or greens.
