Ingredients

The salad

  • 4 cups watermelon, cut into ½-inch cubes
  • 3 cups baby arugula
  • 1 whole English cucumber, chopped
  • ½ cup red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, chopped

The dressing

  • 2 Tbsp olive oil
  • 3 Tbsp red wine vinegar
  • Juice of 1 lime
  • 2 tsp honey
  • to taste salt and pepper

Instructions

  1. Whisk together olive oil, red wine vinegar, lime juice, honey, salt, and pepper in a small bowl or jar until smooth.
  2. Combine watermelon, arugula, cucumber, red onion, feta cheese, and mint leaves in a large bowl.
  3. Drizzle the honey lime dressing over the salad and gently mix until combined.
  4. Season with additional salt or pepper if needed and serve.
