Instructions
- Combine shallot, oregano, half of the mint, vinegar, oil, and a pinch of salt and pepper in a mixing bowl.
- Stir in crumbled feta cheese, leaving some chunks.
- Use a vegetable peeler to shave cucumbers into strands.
- Assemble skewers by alternating watermelon cubes and folded cucumber strands.
- Arrange skewers on a serving tray and drizzle with feta vinaigrette.
- Garnish with remaining mint and fresh pepper before serving.
