Watermelon + Cucumber Skewers

Ingredients

The vinaigrette

  • 2 Tbsp. minced shallot
  • ½ tsp. dried oregano
  • ¼ cup fresh chopped mint
  • 2.5 Tbsp. white wine vinegar
  • 4 Tbsp. extra virgin olive oil
  • 2 ounces feta cheese
  • to taste sea salt
  • to taste fresh ground pepper

The skewers

  • 1 mini seedless watermelon
  • 3 units Persian cucumbers

Instructions

  1. Combine shallot, oregano, half of the mint, vinegar, oil, and a pinch of salt and pepper in a mixing bowl.
  2. Stir in crumbled feta cheese, leaving some chunks.
  3. Use a vegetable peeler to shave cucumbers into strands.
  4. Assemble skewers by alternating watermelon cubes and folded cucumber strands.
  5. Arrange skewers on a serving tray and drizzle with feta vinaigrette.
  6. Garnish with remaining mint and fresh pepper before serving.
