Ingredients

The pizza base

  • 1 whole Watermelon (seedless preferred)

The toppings

  • 4 oz crumbled Feta Cheese
  • 2 Tbsp chopped fresh mint leaves
  • 1 Tbsp olive oil

Instructions

  1. Prepare the grill for direct grilling over medium-high heat.
  2. Cut the watermelon into discs and coat them lightly with olive oil.
  3. Place the oiled watermelon disks directly on the hot grates until grill marks appear.
  4. Flip the watermelon over and top with crumbled feta cheese, then cover the grill for a few minutes.
  5. Remove the watermelon pizza, sprinkle with chopped mint, and slice into wedges.
