Instructions
- Prepare the grill for direct grilling over medium-high heat.
- Cut the watermelon into discs and coat them lightly with olive oil.
- Place the oiled watermelon disks directly on the hot grates until grill marks appear.
- Flip the watermelon over and top with crumbled feta cheese, then cover the grill for a few minutes.
- Remove the watermelon pizza, sprinkle with chopped mint, and slice into wedges.
