Ingredients

The base and frosting

  • 1 slice Watermelon (a round disc, 1 inch thick)
  • 3 tbsp Cream cheese (softened, cut into cubes)
  • 3 tbsp Heavy cream
  • ¼ cup Besti Powdered Monk Fruit Allulose Blend (to taste)
  • 2 tsp Lemon juice
  • ½ tsp Vanilla extract

The toppings

  • ½ cup Blueberries
  • ½ cup Raspberries
  • to taste Fresh mint (optional, for garnish)

Instructions

  1. Slice the watermelon into a 1-inch-thick disc.
  2. Combine the cream cheese, heavy cream, powdered sweetener, lemon juice, and vanilla in a blender and blend until smooth.
  3. Drizzle, spread, or pipe the cream mixture over the watermelon slice.
  4. Top with blueberries, raspberries, and fresh mint if desired.
  5. Cut the watermelon pizza into 8 slices and enjoy.
