Ingredients

The base

  • 1 cup raw pecan halves
  • 1 ½ cups packed large pitted dates
  • 3 Tbsp almond meal

The topping

  • 2/3 cup chopped vegan dark chocolate
  • 1 Tbsp coconut oil

Instructions

  1. Preheat the oven to 350°F (176°C) and roast the pecans for 10-12 minutes.
  2. In a food processor, blend the pitted dates until they form a ball, then add almond meal and blend until combined.
  3. Form the date mixture into 8 small discs and place them on a parchment-lined pan.
  4. Add four toasted pecan halves to each disc to create the turtle 'legs' and freeze for 10 minutes.
  5. Melt the chocolate and coconut oil over a double boiler or in the microwave.
  6. Remove the turtles from the freezer and top each with melted chocolate, coating evenly.
  7. Freeze again for 10-15 minutes to set. Store in an airtight container.
