5-Ingredient Vegan Chocolate Turtles

Instructions
- Preheat the oven to 350°F (176°C) and roast the pecans for 10-12 minutes.
- In a food processor, blend the pitted dates until they form a ball, then add almond meal and blend until combined.
- Form the date mixture into 8 small discs and place them on a parchment-lined pan.
- Add four toasted pecan halves to each disc to create the turtle 'legs' and freeze for 10 minutes.
- Melt the chocolate and coconut oil over a double boiler or in the microwave.
- Remove the turtles from the freezer and top each with melted chocolate, coating evenly.
- Freeze again for 10-15 minutes to set. Store in an airtight container.
