Ingredients

Crust

  • 1 cup almond flour
  • ¾ cup coconut flour
  • 2 tablespoons arrowroot flour
  • cup coconut oil
  • cup coconut sugar

Caramel

  • 1 cup coconut cream
  • 2 tablespoons refined coconut oil
  • ½ cup pure maple syrup
  • 1 pinch salt
  • ½ teaspoon vanilla extract

Turtle Topping

  • 1 cup pecan halves
  • 1 cup vegan chocolate chips

Instructions

  1. Preheat the oven to 350º F.
  2. In a food processor, combine all crust ingredients, starting with ⅓ cup coconut oil.
  3. Pulse to combine and check the texture; add more coconut oil if necessary.
  4. Line an 8x8 or 9x13 pan with parchment paper and press the crust mixture into the pan.
  5. Bake the crust for 20 minutes until firm.
  6. Meanwhile, make the caramel by combining all caramel ingredients in a microwave-safe bowl.
  7. Microwave the caramel mixture in intervals, stirring in between, until thick and rich.
  8. Sprinkle pecan halves over the baked crust and pour the caramel on top.
  9. Bake for an additional 7-10 minutes until bubbly.
  10. Remove from the oven and sprinkle chocolate chips on top, smoothing them out after a few minutes.
  11. Chill for a couple of hours, then cut into squares.
