Instructions
- Preheat the oven to 350º F.
- In a food processor, combine all crust ingredients, starting with ⅓ cup coconut oil.
- Pulse to combine and check the texture; add more coconut oil if necessary.
- Line an 8x8 or 9x13 pan with parchment paper and press the crust mixture into the pan.
- Bake the crust for 20 minutes until firm.
- Meanwhile, make the caramel by combining all caramel ingredients in a microwave-safe bowl.
- Microwave the caramel mixture in intervals, stirring in between, until thick and rich.
- Sprinkle pecan halves over the baked crust and pour the caramel on top.
- Bake for an additional 7-10 minutes until bubbly.
- Remove from the oven and sprinkle chocolate chips on top, smoothing them out after a few minutes.
- Chill for a couple of hours, then cut into squares.
