Healthy Turtle Brownies

Ingredients

The brownies

  • ½ cup water, warm
  • ½ cup unsweetened dark cocoa powder
  • 1 tsp instant coffee (optional)
  • cup chocolate chips
  • 1 large egg, room temperature
  • cup almond butter
  • ½ cup milk of choice
  • cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup soy protein powder
  • ½ cup oat flour
  • ¾ tsp baking soda
  • ½ tsp salt

The caramel

  • ¼ cup almond butter
  • ¼ cup milk of choice
  • cup maple syrup
  • 1 Tbsp cornstarch
  • ½ tsp vanilla extract
  • pinch salt

The topping

  • ¼ cup chocolate chips
  • ¼ cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F and line an 8x8 square pan with parchment paper.
  2. Heat the water in the microwave until warm.
  3. In a small bowl, whisk together the cocoa powder and instant coffee, then add warm water and stir until smooth.
  4. Add chocolate chips to the cocoa mixture and stir until melted.
  5. In a large bowl, whisk together the egg, almond butter, maple syrup, milk, and vanilla extract until well combined.
  6. In another bowl, mix the protein powder, oat flour, salt, and baking soda.
  7. Combine the cocoa mixture with the wet ingredients, then add the dry ingredients and stir until smooth.
  8. Pour the batter into the prepared pan and bake for 18-22 minutes until a toothpick comes out with small crumbs.
  9. While the brownies are baking, prepare the caramel by mixing almond butter, milk, maple syrup, cornstarch, vanilla extract, and salt in a bowl.
  10. Once the brownies are slightly cooled, spread the caramel over the top.
  11. Sprinkle chopped walnuts and chocolate chips on top of the caramel.
  12. Allow the brownies to cool completely before cutting into squares.
