Instructions
- Preheat the oven to 350°F and line an 8x8 square pan with parchment paper.
- Heat the water in the microwave until warm.
- In a small bowl, whisk together the cocoa powder and instant coffee, then add warm water and stir until smooth.
- Add chocolate chips to the cocoa mixture and stir until melted.
- In a large bowl, whisk together the egg, almond butter, maple syrup, milk, and vanilla extract until well combined.
- In another bowl, mix the protein powder, oat flour, salt, and baking soda.
- Combine the cocoa mixture with the wet ingredients, then add the dry ingredients and stir until smooth.
- Pour the batter into the prepared pan and bake for 18-22 minutes until a toothpick comes out with small crumbs.
- While the brownies are baking, prepare the caramel by mixing almond butter, milk, maple syrup, cornstarch, vanilla extract, and salt in a bowl.
- Once the brownies are slightly cooled, spread the caramel over the top.
- Sprinkle chopped walnuts and chocolate chips on top of the caramel.
- Allow the brownies to cool completely before cutting into squares.
