Ingredients

Brownies

  • ½ cup water, warm
  • ½ cup unsweetened dark cocoa powder
  • 1 tsp instant coffee (optional)
  • cup chocolate chips
  • 1 large egg, room temperature
  • cup almond butter
  • ½ cup milk of choice
  • cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup soy protein powder, unflavored or vanilla
  • ½ cup oat flour
  • ¾ tsp baking soda
  • ½ tsp salt

Caramel

  • ¼ cup almond butter
  • 2 Tbsp almond butter
  • ¼ cup milk of choice
  • cup maple syrup
  • 1 Tbsp cornstarch
  • ½ tsp vanilla extract
  • pinch salt

Topping

  • ¼ cup chocolate chips
  • ¼ cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F and line an 8x8 square pan with parchment paper.
  2. Heat the water in the microwave until warm.
  3. In a small bowl, whisk together cocoa powder and instant coffee, then add warm water and stir until smooth.
  4. Melt the chocolate chips in the cocoa mixture.
  5. In a large bowl, whisk together the egg, almond butter, maple syrup, milk, and vanilla extract.
  6. In another bowl, mix the protein powder, oat flour, salt, and baking soda.
  7. Combine the cocoa mixture with the wet ingredients, then add the dry ingredients and mix until smooth.
  8. Bake for 18-22 minutes until a toothpick comes out with small crumbs.
  9. While baking, prepare the caramel by mixing almond butter, milk, maple syrup, cornstarch, vanilla, and salt.
  10. Spread the caramel over the cooled brownies, then sprinkle with walnuts and chocolate chips.
  11. Allow to cool completely before cutting into squares.
