Instructions
- Preheat the oven to 350°F and line an 8x8 square pan with parchment paper.
- Heat the water in the microwave until warm.
- In a small bowl, whisk together cocoa powder and instant coffee, then add warm water and stir until smooth.
- Melt the chocolate chips in the cocoa mixture.
- In a large bowl, whisk together the egg, almond butter, maple syrup, milk, and vanilla extract.
- In another bowl, mix the protein powder, oat flour, salt, and baking soda.
- Combine the cocoa mixture with the wet ingredients, then add the dry ingredients and mix until smooth.
- Bake for 18-22 minutes until a toothpick comes out with small crumbs.
- While baking, prepare the caramel by mixing almond butter, milk, maple syrup, cornstarch, vanilla, and salt.
- Spread the caramel over the cooled brownies, then sprinkle with walnuts and chocolate chips.
- Allow to cool completely before cutting into squares.
