Ingredients

The crust

  • 1 ¾ cup almond flour
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • 1 tsp vanilla
  • ¼ tsp salt

The turtle layer

  • ½ cup coconut cream
  • ½ cup coconut sugar
  • 2 tsp coconut oil
  • ½ tsp salt
  • 1 tsp vanilla
  • 1 ½ cups chopped pecans
  • 1 ½ cups chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Preheat the oven to 350°F and line an 8×8 brownie pan with parchment paper.
  2. Mix almond flour, coconut oil, maple syrup, vanilla, and salt in a small bowl until combined.
  3. Form the mixture into the bottom of the pan and bake for 15-17 minutes until golden brown. Let it cool.
  4. In a medium saucepan, combine coconut cream, coconut sugar, coconut oil, and salt, and heat on medium, stirring consistently.
  5. Once the mixture boils, reduce heat to medium-low and stir for 10-15 minutes until thickened.
  6. Turn off the heat and add vanilla to the caramel mixture.
  7. Pour the caramel over the cooled crust and sprinkle chopped pecans on top.
  8. Melt chocolate chips with coconut oil in the microwave in 30-second increments, then pour over the pecans and spread evenly.
  9. Chill in the freezer for at least 1 hour before cutting into bars.
