Instructions
- Preheat the oven to 400°F and prepare a muffin pan with liners or cooking spray.
- In a bowl, whisk together the flour, cornmeal, sugar, salt, baking powder, and baking soda.
- Add the egg, buttermilk, and vegetable oil to the dry ingredients and mix until combined.
- Spoon the batter into the muffin cups, filling them just under ⅔ full.
- Bake for 12-15 minutes, or until a toothpick comes out clean.
- For the honey butter, whisk together the butter and honey until well combined.
- Store any leftover honey butter in the refrigerator.
