Ingredients

The muffins

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • cup granulated sugar
  • 1 teaspoon salt
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 large egg
  • 1 cup buttermilk
  • cup vegetable oil

The honey butter

  • ½ cup butter
  • 3 tablespoons honey

Instructions

  1. Preheat the oven to 400°F and prepare a muffin pan with liners or cooking spray.
  2. In a bowl, whisk together the flour, cornmeal, sugar, salt, baking powder, and baking soda.
  3. Add the egg, buttermilk, and vegetable oil to the dry ingredients and mix until combined.
  4. Spoon the batter into the muffin cups, filling them just under ⅔ full.
  5. Bake for 12-15 minutes, or until a toothpick comes out clean.
  6. For the honey butter, whisk together the butter and honey until well combined.
  7. Store any leftover honey butter in the refrigerator.
