Instructions
- Preheat the oven to 400°F.
- Grease the muffin tins with 1-2 tablespoons of melted butter and place them in the oven to heat for 5-10 minutes.
- In a mixing bowl, combine cornmeal, flour, baking powder, and salt.
- Add eggs, ¼ cup melted butter, and buttermilk to the dry ingredients and stir until just combined.
- Pour the batter into the heated muffin cups, leaving about an inch from the top.
- Bake for 18-25 minutes, or until a toothpick inserted in the center comes out clean.
