Ingredients

  • 1 cup yellow cornmeal
  • 1 ½ cups whole wheat pastry flour or white whole wheat flour
  • 1 ½ cups all-purpose flour
  • 2 tablespoons baking powder
  • ½ cup granulated sugar
  • 1 ½ teaspoons kosher salt
  • 2 large eggs
  • ½ cup unsweetened applesauce
  • ¼ cup unsalted butter
  • 1 ½ cups skim milk

Instructions

  1. Combine the dry ingredients in a large mixing bowl.
  2. In a separate bowl, whisk together the wet ingredients.
  3. Pour the wet ingredients into the dry ingredients and stir to combine without overmixing.
  4. Let the batter rest at room temperature for 20 minutes.
  5. Preheat the oven to 350°F and prepare a muffin tin.
  6. Spoon the batter into the muffin cups, filling each to the top.
  7. Bake for 23 to 25 minutes until golden brown and a toothpick comes out clean.
  8. Let cool for 5 minutes in the pan before transferring to a wire rack.
