Cornbread Muffins

Instructions
- Combine the dry ingredients in a large mixing bowl.
- In a separate bowl, whisk together the wet ingredients.
- Pour the wet ingredients into the dry ingredients and stir to combine without overmixing.
- Let the batter rest at room temperature for 20 minutes.
- Preheat the oven to 350°F and prepare a muffin tin.
- Spoon the batter into the muffin cups, filling each to the top.
- Bake for 23 to 25 minutes until golden brown and a toothpick comes out clean.
- Let cool for 5 minutes in the pan before transferring to a wire rack.
