Ingredients

  • 1 cup yellow cornmeal
  • ¼ cup all-purpose gluten-free flour blend
  • ½ teaspoon fine salt
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup milk of choice
  • cup avocado oil
  • 2 large eggs
  • 3 tablespoons honey

Instructions

  1. Preheat the oven to 350℉ and prepare a muffin pan.
  2. Combine all ingredients in a mixing bowl and stir until well combined.
  3. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  4. Bake for 10-12 minutes until a toothpick comes out clean.
  5. Let the muffins cool for 5 minutes before serving.
