Ingredients

  • 1 cup all-purpose flour
  • 1 cup corn meal
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup honey
  • ½ cup milk
  • 2 large eggs
  • 1 cup corn (frozen or canned)
  • 2 teaspoons fresh basil (chopped)
  • cup sour cream
  • ¼ cup oil

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with butter and flour or muffin liners.
  2. In a medium bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
  3. Add honey, sour cream, milk, and lightly beaten eggs to the dry ingredients and mix until well combined.
  4. Fold in the corn, basil, and oil until the mixture is slightly runny.
  5. Pour the batter into the prepared muffin pan.
  6. Bake for 15-18 minutes or until golden brown and a toothpick inserted in the center comes out clean.
