Instructions
- Preheat the oven to 350°F and prepare a muffin tin with butter and flour or muffin liners.
- In a medium bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
- Add honey, sour cream, milk, and lightly beaten eggs to the dry ingredients and mix until well combined.
- Fold in the corn, basil, and oil until the mixture is slightly runny.
- Pour the batter into the prepared muffin pan.
- Bake for 15-18 minutes or until golden brown and a toothpick inserted in the center comes out clean.
