Instructions
- Preheat the oven to 400°F and grease a muffin tin.
- Combine milk and vinegar in a measuring cup and set aside.
- In a mixing bowl, whisk together cornmeal, flour, baking powder, and salt.
- Add the milk mixture, egg, honey, and oil to the dry ingredients, stirring until just combined.
- Gently fold in the cheese and corn without over-mixing.
- Pour the batter into the muffin tin and bake for 18-20 minutes until a knife comes out clean.
- Allow to cool for 15 minutes before transferring to a wire rack to cool completely.
