Instructions
- Preheat the oven to 375°F.
- In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
- Add melted coconut oil, applesauce, almond milk, honey, and vanilla to the dry ingredients and mix until combined.
- Divide the batter evenly among 40 mini muffin cups or pour into a prepared 8-inch pan.
- Bake the muffins for 17 to 20 minutes, or until a toothpick inserted in the middle comes out clean. If using a pan, bake for 25 to 30 minutes.
- Transfer the muffins to a wire rack to cool before enjoying.
