Ingredients

  • cups cornmeal
  • 1 cup whole wheat flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 4 Tbsp coconut oil, melted (or butter)
  • ¼ cup unsweetened applesauce
  • 1 cup unsweetened almond milk
  • cup honey
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. Add melted coconut oil, applesauce, almond milk, honey, and vanilla to the dry ingredients and mix until combined.
  4. Divide the batter evenly among 40 mini muffin cups or pour into a prepared 8-inch pan.
  5. Bake the muffins for 17 to 20 minutes, or until a toothpick inserted in the middle comes out clean. If using a pan, bake for 25 to 30 minutes.
  6. Transfer the muffins to a wire rack to cool before enjoying.
