Instructions
- Preheat the oven to 400°F.
- In a mixing bowl, combine the cornmeal, flour, baking powder, and salt.
- Add the beaten eggs, melted butter, and buttermilk to the dry ingredients and stir until just combined.
- Heat a cast iron skillet over medium heat and add the butter to grease it.
- Pour the batter into the hot skillet.
- Transfer the skillet to the oven and bake for 20-25 minutes until a toothpick comes out clean.
- Let the cornbread cool for at least 20 minutes before slicing.
