Ingredients

The batter

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon table salt
  • 1 ½ cups buttermilk
  • 2 large eggs

  • 6 tablespoons unsalted butter

Instructions

  1. Preheat the oven to 400°F and position an oven rack in the middle.
  2. Lightly grease a 9-inch cast iron skillet and place it in the oven to heat.
  3. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  4. Make a well in the center of the dry ingredients and add the buttermilk and eggs, mixing until combined.
  5. Add the melted butter to the batter and mix gently to combine without over-mixing.
  6. Carefully remove the hot skillet from the oven and pour the batter into it.
  7. Return the skillet to the oven and bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Allow the cornbread to cool for 10 minutes before slicing and serving.
