Simple Skillet Cornbread

Ingredients

  • 2 cups whole-grain cornmeal (finely ground)
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • cups buttermilk
  • 2 large eggs
  • 5 tablespoons butter (melted)

Instructions

  1. Preheat a 9-inch cast iron skillet in a 450°F oven for at least 10 minutes.
  2. In a large bowl, whisk together the cornmeal, salt, baking powder, and baking soda.
  3. Make a well in the center and add the buttermilk, eggs, and melted butter, then mix until combined.
  4. Pour the batter into the hot skillet and bake until golden brown and a toothpick comes out clean, about 18 minutes.
  5. Serve warm and freeze any leftovers.
