Instructions
- Preheat a 9-inch cast iron skillet in a 450°F oven for at least 10 minutes.
- In a large bowl, whisk together the cornmeal, salt, baking powder, and baking soda.
- Make a well in the center and add the buttermilk, eggs, and melted butter, then mix until combined.
- Pour the batter into the hot skillet and bake until golden brown and a toothpick comes out clean, about 18 minutes.
- Serve warm and freeze any leftovers.
