Ingredients

  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 tsp salt
  • 1 Tbsp baking powder
  • 1 cup buttermilk
  • ½ cup milk
  • 1 large egg
  • ½ tsp baking soda
  • ¼ cup shortening
  • 2 Tbsp shortening

Instructions

  1. Preheat the oven to 450°F.
  2. In a bowl, whisk together cornmeal, flour, salt, and baking powder.
  3. In a measuring cup, combine buttermilk and milk, then stir in the egg and baking soda.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Melt ¼ cup of shortening in the microwave and add it to the batter, stirring until combined.
  6. In an iron skillet over high heat, melt the remaining 2 Tbsp of shortening.
  7. Pour the batter into the hot skillet and spread it evenly.
  8. Cook on the stovetop for about 1 minute, then transfer to the oven.
  9. Bake for 15 to 20 minutes, or until golden brown and the edges are crispy.
