Instructions
- Preheat the oven to 450°F.
- In a bowl, whisk together cornmeal, flour, salt, and baking powder.
- In a measuring cup, combine buttermilk and milk, then stir in the egg and baking soda.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Melt ¼ cup of shortening in the microwave and add it to the batter, stirring until combined.
- In an iron skillet over high heat, melt the remaining 2 Tbsp of shortening.
- Pour the batter into the hot skillet and spread it evenly.
- Cook on the stovetop for about 1 minute, then transfer to the oven.
- Bake for 15 to 20 minutes, or until golden brown and the edges are crispy.
