Ingredients

  • cup all-purpose flour
  • ¾ cup cornmeal

  • teaspoons baking powder
  • 3-4 tablespoons sugar
  • 2 tablespoons chives
  • 1-2 tablespoons jalapeno pepper, diced (optional)
  • 1 teaspoon salt
  • ½ cup whole milk
  • 1 cup buttermilk
  • 2 eggs lightly beaten
  • 8 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F and spray a 10-inch skillet.
  2. In a medium bowl, whisk together the flour, cornmeal, baking soda, baking powder, sugar, chives, jalapeno, and salt.
  3. Whisk in the milk, buttermilk, and lightly beaten eggs until well combined.
  4. Add the melted butter and mix until incorporated.
  5. Pour the batter into the prepared skillet.
  6. Bake for about 18-20 minutes until light golden brown and a toothpick inserted in the center comes out clean.
