Ingredients

  • 1 cup organic cornmeal
  • ½ cup whole wheat pastry flour
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup organic buttermilk
  • cup honey
  • 1 large egg
  • cup melted coconut oil
  • ½ cup frozen corn kernels, defrosted

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the cornmeal, whole wheat pastry flour, baking soda, and salt.
  3. In a smaller bowl, whisk together the buttermilk, honey, egg, and melted coconut oil until well combined.
  4. Pour the wet ingredients into the dry ingredients and add the corn kernels, gently stirring until just incorporated.
  5. Transfer the mixture into a greased 10-inch cast-iron skillet or a 9x9 baking dish.
  6. Bake for 25-30 minutes until golden brown and set through.
  7. Cool, serve, and enjoy!
