Instructions
- Whisk together cornmeal and buttermilk in a large bowl and let rest for 30 minutes.
- Preheat the oven to 375°F and butter a 13 by 9-inch baking dish.
- In another bowl, whisk together flour, baking powder, baking soda, and salt.
- Add melted butter, applesauce, sugar, honey, and eggs to the cornmeal mixture and whisk until combined.
- Stir in the dry ingredients until just combined; the batter will be lumpy.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25 to 35 minutes until a toothpick inserted in the center comes out clean.
- Cool for 5 to 10 minutes before slicing and serve with honey or whipped honey butter.
