Instructions
- Preheat the oven to 350°F and prepare a muffin tin.
- In a medium bowl, whisk together the blue cornmeal, cake flour, sugar, baking powder, and salt.
- In another bowl, combine the buttermilk, egg, and melted butter, then mix well.
- Combine the wet and dry ingredients until just mixed, then fill the muffin tin wells 3/4 full.
- Bake for 10-12 minutes or until a skewer comes out clean.
- For the honey butter, beat the butter, honey, and salt until light and fluffy.
- Allow the muffins to cool slightly before serving with the honey butter.
