Ingredients

The cornbread

  • ½ cup unsalted butter
  • 1 ½ cups cornmeal
  • 1 ½ cups white whole wheat flour
  • 1 ½ teaspoons fine sea salt
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 3 large eggs
  • cup honey or maple syrup
  • 1 ½ cups milk of choice

Optional serving suggestions

  • to taste additional butter
  • to taste honey
  • to taste jam

Instructions

  1. Preheat the oven to 375°F and melt the butter in a cast iron skillet.
  2. In a bowl, mix the cornmeal, flour, salt, baking powder, and baking soda.
  3. In another bowl, whisk together the eggs and honey, then add the milk.
  4. Combine the wet and dry ingredients, then stir in the melted butter.
  5. Pour the batter into the hot skillet and bake for 25 to 30 minutes until golden.
